  1. Primero haremos un poolish con la harina, el agua y la levadura. Pondremos la harina con la levadura en un bowl y agregaremos el agua de poco en poco, hasta integrarlos bien y dejaremos reposar por 1 hora en un lugar cálido.
  2. Después volveremos la harina sobre nuestra mesa y haremos un volcán y en medio agregaremos nuestro poolish de poco en poco, y lo integraremos solo utilizando las yemas de los dedos.
  3. Cuando ya hayamos terminado de integrar el poolish se agregara el aceite. (En caso de que nuestra mezcla esté muy seca, se le puede agregar un poco más se agua tibia)
  4. Cuando nuestra masa esté lista la llevaremos a fermentar hasta que doble si tamaño, para esto nos pondremos un poco de aceite de olivo en la manos y en un bowl para que no se pegue.
  5. Cuando nuestra masa ya haya doblado su tamaño, la pondremos sobre nuestra mesa y la estiraremos con ayuda de un rodillo y la cortaremos en rectángulos.
  6. Al terminar se barnizaran con un poco de aceite de oliva y se le colocarán las aceitunas. Y los volveremos a dejar reposar otro 15 min aproximadamente.
  7. Pasado de nuevo los 15 min los llevaremos al horno precalentado a 185°C de 15 a 25 min.
  8. Y están listos para disfrutar
