- 150 azúcar mascabada

- c/n licor o Controy

- c/n azúcar glass

- Mezclar los ingredientes del poolish durante unos minutos y fermentar a temperatura ambiente durante 6 hrs.

- Para la masa final: poner en una bandeja de pan la harina, azúcar, sal, huevo y levadura además del poolish. Amasar durante 10 minutos.



- Agregar la mantequilla derretida junto con la ralladura de naranja y amasar durante 15 minutos hasta tener una masa suave.
Reposar en la bandeja hasta que duplique su tamaño.


- Después de la fermentación, ponchar la masa y extender sobre una mesa enharinada. Dar forma de rectángulo. Barnizar con mantequilla con ayuda de una brocha. Poner el azúcar mascabado y blanca mezclada con la canela en polvo.



- Agregar las pasas y arándanos remojados en Controy y las nueces picadas. Envolver haciendo un gran taco y pegando cada vuelta con huevo batido.
Cortar en rebanadas de 2.5 cm de ancho y acomodar de manera individual o bien si se prefiere de 5cm de ancho para acomodar en un molde de aluminio rectangular.
Poner mantequilla en cubitos encima del rol y reposar 20 minutos antes de hornear durante 30’ a 200°C.


- Una vez fríos los roles, hacer una mezcla con el azúcar glass y el Controy y glasear la superficie del pan. En este caso yo decide espolvorear el azúcar y una base de caramelo
