- 150 g harina
- 150 g agua
- 1 g levadura seca
- Para la masa
- 175 g harina
- 10 g harina integral
- 4 g sal
- 2 g levadura seca
- 100 ml agua
- 20 g aceite de oliva
- c/n aceituna

- Empezaremos haciendo el poolish

- Le agregaremos el agua y revolvemos bien hasta mezclar todos los secos (harina y la levadura)



- Después dejamos que fermente y cuando esté listo empezamos hacer la masa

- Hacemos un volcán con los secos(harinas, sal y levadura) y le agregaremos el poolish y revolvemos hasta integrar todo los secos



- Y le agregaremos los líquidos y amasamos



- Una vez terminado el amasado en un bol le agregaremos aceite y ponemos nuestra masa a fermentar hasta que doble su tamaño



- Cuando ya esté fermentado la pocharemos y con ayuda de un rodillo la extendemos y empezamos a cortar en rectángulos



- Le ponemos las aceitunas y lo dejamos a su segunda fermentación cuando esté lista la metemos al horno a 180° por 15 min


- Y listo a disfrutar
